In the summer, I have to admit that I drink a lot less tea. I brew a light herbal tea in the morning and I leave it on the table and drink it just warm or cold throughout the day. But when it gets a little cool outside, I need hot herbal tea 2 to 4 times a day.
I really love chai tea, especially rooibos chai herbal teas which are caffeine free and the rooibos taste wonderful with the spices. As I try different brands and spices, I will add them on this page.

How I made it : I brewed the tea in a cup with 250 ml of water for 5 minutes and I did not add any sugar or milk. Preheat your cup before with hot water so that your tea stays warm for longer.
My opinion : If you like a light chai tea, this one is perfect. I personally enjoy when it is a little bit more spicy with cardamom and black pepper, but this is a very nice and enjoyable chai tea with a unique flavor. The sweet cinnamon taste is quite present.
Ideas and suggestions : This tea would be good with milk and I would add a pinch of crushed cardamom seeds straight in the cup. Also, because of the cinnamon taste, it would be a very nice tea to add to a recipe. Why not infuse milk with this tea in a spicy cake/cookie recipe. That’s a big, big yes ! If you want to make ice tea with it, brew with two bags.

Cinnamon : Relieves an upset stomach, enhances digestion. Antibacterial and antiviral, it is good against colds.
Ginger Root : Prevents motion sickness, expectorant, anti-inflammatory and antibacterial. Good against colds.
Clove : Digestive aid and antibacterial.
So it is a great tea to drink during the cold season !

I also make my own blend of chai with rooibos, cardamom, ginger, fennel, black pepper and cloves. I like to made my blends because I can vary the amount of spices and the recipe. It also allows me to put more crushed cardamom seeds because I just love it !

Chai Recipe – How To Brew The Best Chai Tea Ever
Recipe for 1 litre of chai tea
500 ml water
500 ml milk (or soya milk unsweetened)
4 teaspoon of chai blend spices
4 teaspoon of brown sugar
- Boil water in a pot with a lid on the stove
- Add your blend of spices and simmer for 5 minutes (it will allow the flavors from the seeds to infuse more = more tasty!)
- Add milk and sugar and boil lightly and remove from the stove right away
- Cover and infuse for 5 to 10 minutes
- Filter
- Enjoy !
You can put more or less milk, more or less spices, more or less sugar.. make it how you love it !
